Well basically the most common and "original" spoken form of the Chinese language is known as Madarin, and then there are tons of dialects based on the subgroups within the Chinese, which is mostly determined by the areas which the people live in. In particular, Cantonese came from around the Guangzhou area, and is mostly used by people in Hong Kong nowadays.
